I don’t think many people know about choriqueso, but this cheesy dip with hidden specks of smoky Mexican chorizo is so velvety and melty that they won’t forget it once they try it! I love to serve it in a mini cast- iron pan for a bit of a restaurant feel, but it’s just as good in a large pan. This molten golden gooey deliciousness is guaranteed to draw a crowd. Use fresh Mexican chorizo sausage if you can find it. This is not a dried Spanish chorizo situation. Feel free to swap in shredded mozzarella if you can’t find Oaxaca cheese.
When you’re in a time pinch, this pizza is possibly the best way to use puff pastry. Just add cheese. Add tomatoes. More cheese. Olive oil. Herbs. Bake until golden and puffed and cheesy and it smells like you’ve lit a pizza margherita candle in your kitchen. You win at dinner.

But this recipe is not that! And you might not approve of calling it “pizza,” but let’s just go with it. This is pizza night my way—lazy but delicious. It takes less than 15 minutes to assemble and does not require time for the dough to rise, nor a special oven. Made in a sheet pan, from phyllo dough and without sauce, it’s definitely not traditional. Yet the phyllo makes a light and flaky base for a simple assortment of veggies and cheeses.

The frittata is usually made with spaghetti, vermicelli, or bucatini, but short pasta such as penne or rigatoni will also work. Eggs are the ingredient that binds everything together: as a general rule, allow one egg per person, and maybe one more for the pan. As the recipe was created to use leftovers, consider it a blank canvas and use it to upcycle any leftover cheese that has been sitting at the back of your fridge for too long: grated Parmigiano-Reggiano or pecorino or cubed or sliced mozzarella, scamorza, or provola.
