Throughout the Caribbean and American South, African slaves transformed the tails of oxen or other cattle, the discards of wealthy plantation owners, into a delicacy by slow-braising them in rich, fragrant stews. In Haiti, oxtail is served with pikliz, an intense peppery and sour slaw tart enough to make your jaws clench, similar in taste and texture to the Southern condiment chow chow. Pikliz is most often made with green cabbage, but I use red cabbage, which is prettier and slightly sweeter, and brussels sprouts, which have a hint of nuttiness. Serve with your favorite white rice.
You won’t believe how good mushrooms can taste. All you need is soy sauce, a bit of honey, and a dash of smoked paprika. After a quick roast, they’re crispy and packed with deep umami. You can serve these mushrooms as a main dish accompanied by cooked buckwheat, or use them in Miso Żurek with Mashed Potatoes, Roasted Mushrooms, and Dill.

The ordering key to a chili parlor is thus, and will guide you in your own kitchen as well
If you’ve never had red beans and rice before, let me warn you that you just might become addicted to it. When you cook this dish, the house will smell amazing, and you will be eager to dig in every minute you wait for it to be finished. Make this with Honey Jalapeño Cornbread and thank me later.
INGREDIENTS
Whether shopping in your own garden or your neighbor’s, or at a farmers’ market, look for small vegetables for this. You want baby eggplant, either long Asian-style or smaller Italian globes, picked when the skin is still shiny and the interior seeds are still small. Skinny Italian frying peppers. Sweet garden onions with the green tops still attached. Thin-skinned cherry tomatoes and zucchini picked well before they explode. I’d avoid those tiny, bland “baby zucchini”; in my experience, zucchini doesn’t develop any personality until adolescence.
The Sanskrit kanji refers to the thick, starchy water that’s left behind when rice is cooked for a while; it is also the origin for congee, which is also eaten in other parts of Asia where rice is a staple. While this is the dish my mother always served me when I was unwell (she cooked it with bits of chicken), I’ve given it a bit of a makeover and brought in a few spices.
There are few things in life more welcoming than the scent of a roast chicken –
it has to be the ultimate comfort food, the sort of dish that brings people together around the kitchen table. This recipe for pot-roast chicken is good-mood food, and good-mood cooking, too. You just throw everything in the pot and let it roast away merrily. A wonderfully simple way to honour a whole bird.
If the flavors of autumn could be rolled into one, this meringue roulade would be the result: warming cinnamon, burnt honey, sweet apples, and tangy orange come together to make a dessert fit for the festive season. Make sure all your individual components have completely cooled before assembling—you don’t want to create any excess moisture in the roulade. Get ahead by preparing the apples and cream the day before, keeping them refrigerated until needed.
