My mother always made curry with S&B or House Foods curry bricks, just as convenient as bouillon cubes. I like the convenient part, but I don’t care for all the additives that go into most of these store-bought brands. So I started making my own by blending a variety of spices including turmeric, which gives my curry a bright mustardy yellow color and pungent flavor. First you will need to make your own Japanese Curry Brick which you can keep in the fridge for 1 week or in the freezer for 3 months. The base stock is a cold-brew kombu and shiitake mushroom dashi, which can, like the curry brick, be made ahead of time. The curry is traditionally served with rice or noodles and fukujinzuke, a classic pickle made with seven vegetables, a perfect crunchy counterpart to the soft, mild curry.
Who doesn’t love ham and pineapple pizza? Hawaiian is one of my favorite pizza flavors, and I can’t get enough of it, so a bacon and pineapple fried rice is the next best thing. The black pepper helps to add a bit of heat and spice to complement the smokiness of the bacon, and the sweetness of the pineapple. For those who are skeptical about pineapple in fried rice, it’s a staple dish, and hails from the Yunnan region in China.
These rice balls are inspired by my friends Lawrence and Noi Allen, who used to own one of the only Thai markets in Houston, Asia Market. I started going there to buy green papayas. But I never left with just papayas—each visit would start with me wandering the aisles, checking out all the different ingredients, until Lawrence would come over and strike up a conversation. He probably didn’t realize when he asked me if I needed help that I was going to bombard him with all kinds of questions about ingredients and Thai cooking, but he was always generous with his time and knowledge.

When I ask my husband what we should make for dinner and he says “salmon,” it almost sounds like a sigh and a shrug. Get excited, my friends, because this is the salmon recipe that will bring back the love. And if you don’t normally make salmon at home, this is a great recipe to get you started. It’s pretty foolproof.
There’s nothing new about marinating chicken with herbs and citrus, but the addition of fish sauce takes this tried-and-true technique to something seriously next level. The fish sauce works its way deep into the chicken to impart its funky, salty flavor all the way through. Hanger Steak is relatively lean but packed with flavor. Lime juice and a heap of mint and cilantro leaves make the dish salady and satisfying, and give it an Asian twist.
Some Neapolitans say this dish is simplified French ratatouille, while others contend that ratatouille is complicated cianfotta. Either way, this stew is a tender medley of seasonal summer produce. While cooking cianfotta, as it’s known in the local dialect (ciambotta in Italian), you want everything to sort of steam in its own juices; you’ll need to control the heat so you don’t need to add any water. In the end, the vegetables should be very soft and almost falling apart and the flavors should all be beautifully married.

When I think of Vietnamese food, it’s fresh herbs that spring to mind. The coriander (cilantro) in this dish is essential, but ideally you should get all three herbs – they’re well worth it. Life is full of choices, and so is this recipe. For instance, you can add steamed broccoli or pak choi (bok choi), or have it with noodles instead of rice.
