This is the ultimate one-pot meal that feeds many and comforts all. By far, my favorite traditional main course. Essentially a soup made with meat (a combination of beef and pork) or seafood and root vegetables, the dish varies from home to home and town to town.
A whole book could be written about this dish, since it has been adapted and appropriated by many countries across Latin America and the Caribbean. Hence, sancocho recipes are personal, unscripted, often use locally available ingredients , and can be watered down if unexpected mouths show up.
Serving and eating sancocho is particularly personal. I go with how it was always served at my mother’s home: Once the soup is ready, the roots, corn, and meats are taken out of the broth and divided onto large platters. The broth is then strained, skimmed, and reheated to be served on the side along with lime wedges, avocado slices, white rice, and ají.
Each person gets a plate and a bowl, and they assemble their own sancocho as they wish. Some cut the roots and meats up to add back into the broth, while others eat it separately and sip the broth between bites. Whichever way you choose is fine.
Regardless, there is a lot of silverware involved.
This is one of my all-time favorite savory breakfast items. I created this recipe for a client’s child—a picky eater who wouldn’t touch any vegetables. I took some popular kid foods—potatoes, eggs, cheese, and milk—mixed them with some colorful veggies, then baked the mixture on a sheet pan. Cut into palm-sized rectangles, the resulting savory “pancakes” were a hit. They taste as good as they look and are filled with gut-friendly nutrients, including fiber and prebiotics. I like to use a box grater, but if you prefer a food processor or mandoline, that’s fine. Make sure not to overblend with the food processor.

Buckwheat is the most popular grain in Slavic cuisine. When a crisis hits any Slavic country, buckwheat is usually the first thing that disappears from grocery store shelves. That’s how much people rely on it in their diet. I was never crazy about buckwheat when I was a kid. But when mom made me this soup, everything changed. It has the most alluring deep flavor of buckwheat and mushrooms with the right balance of sweetness and earthiness. It’s just like being wrapped in a cozy blanket and taking an autumn walk in a forest. I love eating this soup piping hot with the darkest rye bread I can find.
This is a meatless riff on one of my all-time favorite sheet pan dinners: a spicy harissa-slathered chicken loaded with lemony leeks, crispy potatoes, and a salty, garlicky yogurt topping. Here, roasted cauliflower stands in for the poultry, and almonds are tossed in for crunch. Added bonus: without the chicken, this lively, highly festive meal comes together in a flash.
Make the labneh: Line a medium sieve with muslin or finely woven cheesecloth and place atop a container large enough to catch any drips. Transfer the yogurt to the muslin and place the whole thing in the refrigerator overnight. The liquid that separates is whey and can be saved for another use, such as baking sourdough, adding to salad dressings, or fermenting. Store the labneh refrigerated in a sealed container for up to 10 days.
Serve hot, warm, or cold. You can double this recipe and make it in a medium (10-inch) skillet. Don’t be alarmed by the quantity of oil and salt; most of it will be drained away. Save the strained oil in the fridge for future tortillas or low-temperature cooking, like sweating vegetables. Have a quick tapas party by serving the tortilla alongside canned fish, salad, crusty bread, and lots of wine.
The greatest failure when making potato salad is overcooking the spuds—creamy mashed pota-toes is a no-go for any potato salad recipe. You want a waxy variety like fingerlings, Yukon Golds, or red potatoes; these varieties will keep their shape and texture when cooked right. Bobby Seale, cofounder of the Black Panther Party, said it well in his 1988 cookbook Barbeque’n with Bobby, where he wrote under a recipe titled “Hunky Crunchy Potato Salad” that his mother’s potato salad was a “tasty quasi-mashed potato salad.” My pro tip is to season the potatoes while they are warm. Begin your training to be a queen.
