Whether shopping in your own garden or your neighbor’s, or at a farmers’ market, look for small vegetables for this. You want baby eggplant, either long Asian-style or smaller Italian globes, picked when the skin is still shiny and the interior seeds are still small. Skinny Italian frying peppers. Sweet garden onions with the green tops still attached. Thin-skinned cherry tomatoes and zucchini picked well before they explode. I’d avoid those tiny, bland “baby zucchini”; in my experience, zucchini doesn’t develop any personality until adolescence.
Who knew Italians love bacon (pancetta) as much as we do? This is pure comfort food, and it is a quick and easy solution for a satisfying dinner using simple ingredients.
This fragrant brine is rooted in Vivian’s home woods of North Carolina. Pine needles and rosemary are steeped with spices that conjure up those deep woods. And, some would say, evoke the smell of a Thanksgiving-scented candle!

Beware: The roast needs to be cooked in the oven for more than 3 hours, so plan accordingly. The result will be quite something, though. Yes, it’s very fatty meat, but that’s what makes this so delicious. This dish is impossible to ruin; if you leave it in the oven for 30 minutes too long it won’t matter. Serve with something fresh-zesty. I like the horseradish mustard (see recipe below), for example. Such a substantial roulade serves a crowd, and whatever you have left over (if you manage to not finish all of it) will still be delicious the day after.
We strongly recommend that you bake the beetroot [Ed. note, beets in North America] for this recipe according to the instructions below – baked beetroot have a stronger flavour, deeper colour and a denser, crunchier texture. Having said that, you could use boiled and it will still taste really nice. We use regular purple beetroot, but do try multicoloured ones if you wish. And if you don’t have time to make the labneh, you could use a smear of oat crème fraîche.

It’s hard to decide what’s best about this cookie. The texture’s a definite attention-grabber: It has a slight flakiness at first and then it’s all melt. The flavors of the rosemary and Parmesan, one of those meant-to-be matches, are front and center.
