Time: 7 minutes prep, 18 minutes cooking, 25 minutes total 


Have you ever had one of those nights when you’re almost too exhausted to cook or even think about what to make for dinner? Enter Tammie Teclemariam’s minty pork meatball recipe. Two ingredients to pick up from the grocery store and you’re well on your way to a delicious and quick dinner.

Try serving these minty meatballs with rice, and yogurt that’s been thinned down with lemon juice and grated garlic. You’ll thank Tammie later for your new go-to meal.

INGREDIENTS  

  • 1 lb ground pork

  • 2 cups mint, roughly chopped

  • 1 Tbsp. olive oil

DIRECTIONS

  1. In a medium bowl add ground pork, mint, and season with salt and pepper. Mix until fully combined. 

  2. Form the meatballs by portioning the mixture into 12 equal-sized balls, about 2 heaping tablespoons per meatball. They should be the size of a golf ball. 

  3. Heat half of the oil in a large skillet over medium-high heat until shimmering. Working in two batches to make sure you aren’t overcrowding, carefully place meatballs in a single layer. Sear the bottom of the meatball for about 2-3 minutes minutes, then rotate each meatball a quarter turn, and sear for 2 additional minutes. Continue to turn until browned all over and meatballs are cooked through, about 9 minutes cook time per batch of meatballs. Wipe pan out and repeat with remaining oil and meatballs. 

  4. Serve meatballs alone, or with a side of rice and lemony yogurt.
