Francis Lam has admired Chef Bonnie Frumkin Morales of Portland’s Kachka for years. Not just because her food is delicious and her new book Kachka: A Return to Russian Cooking is beautiful, but also because she's one of the few chefs in the country highlighting what she thinks of as the matrilineal cuisine of Russia. Francis talks with Bonnie about the influence of her immigrant family and Jewish-Russian heritage on her food.
