A broccoli salad makes sense. Broccoli loves you, and you love it, so everything is going to be fine. Well, once we make one. Gorgonzola rules, don’t be scared, and eggs rule, so don’t worry. Bacon vinaigrette is always nice and warm. We will get through this and make this right. This salad low- key could be made in any season, warm or cold. Also it’s a fire dinner or breakfast. Dang, just eat this every day, all day. You’ll become so strong.
The appeal of this salad comes from its contrasting flavours and textures. Make this in midsummer, when the nectarines are ripened by the sun and the green beans are still tender. It is best served on a wide plate, rather than piled into a deep bowl.

And Andrea brings it to all our staff potlucks—everyone loves the unique curry vinaigrette, and the salad is vegan, so no one is ever left out.
When we use canned beans, we like to give them a little love before we dress them. Drain them into a sieve, give them a good rinse under cold running water, then drain well and toss with a drizzle of olive oil and season with salt. Then go in with your dressing.
