This dish is the ultimate mash-up between two gold-standard sal- ads: the classic steakhouse wedge (think iceberg lettuce and way too much creamy dressing) and the feta-flecked, veggie-stuffed chopped salad I grew up eating. I definitely surprised myself a lit- tle bit when I reached for iceberg lettuce as the base, but once I loaded it up with cherry tomatoes and cukes, fresh mint, and garlicky bread crumbs that work their way into every crevice and cranny, I realized it was the only choice. But the real star is the rich, creamy feta and yogurt dressing. I highly recommend serving some on the side for extra dunking, in addition to keeping a batch in your fridge for an impromptu salad or dip moment.
Bún cha’ hails from North Vietnam, where the cuisine is much more understated and subtle compared to the boldness and spice of its southern counterpart. I’ve never been up north, but my cousin’s uncle lived there and treated us to bún ch’a when he came to visit. It’s fresh, savory, sweet, and herby all at the same time. Traditional bún ch’a features rice vermicelli noodles served with a vegetal broth, seasoned pork patties, and caramelized pork belly slices. My version presents you with several dining options. You can either dip the noodles in the sauce mixture, pour the sauce all over the noodles, or enjoy it as a lettuce wrap. When you choose the lettuce to use, you can use anything but iceberg—it’s too watery! I recommend seeking out Persian (mini) cucumbers because they’re seedless and add an extra crispy texture to the experience. The pork patties are best when they’re grilled, but if you don’t have easy access to a grill, you can pan-sear them instead.
I love cucumber salads. This water-rich vegetable makes a great guilt-free snack because of its crunch. It’s also a refreshing side. Much of a cucumber’s nutrition is in its skin, so I leave it on here.
I’ll never get tired of eating this salad for lunch— lemony lentils and crisp veggies doused in a creamy green dressing. But I don’t make it the exact same way every time. Instead, I play around with the herbs in the dressing. I might use parsley instead of cilantro or experiment with adding tarragon, dill, or chives. I love that it’s a little bit different each time I eat it!
I won’t try to say this is anything like eating pasta cacio e pepe or that it will satisfy your craving for it—because it isn’t, and it won’t. But there is something ethereal about this salad that really speaks to the season. Shaved vegetables are so elegant and fresh. You could also add some raw zucchini noodles in place of cucumber if you wanted to, serve it on top of thin, crispy or grilled chicken cutlets, or you could pile it on top of baked pizza crust (I might add a little burrata if I was doing that).
Falafels are the perfect plant-based morsel and a family favorite. However, in this salad, I’ve dismantled perfection and discovered a new, delicious way to enjoy the feted flavors of falafels—chickpeas, cumin, parsley, mint, and tahini. The crispy oven-roasted chickpeas are nothing short of incredible, and I encourage you to try roasting all types of beans in this manner.
