I am 10,000 percent convinced that this recipe will the breakout star of this book. In India I had tender coconut ice cream from Naturals, a famous Indian ice cream franchise, and I will never be the same. It had chunks of soft tender coconut in it that gave it a rich texture. The tender coconut filling requires a bit of work since it's made with fresh young coconuts, but it's necessary to get that fresh tender coconut flavor! You can usually find young coconuts at the grocery store in the fresh produce section. This recipe ended up being my husband Rhut's favorite, and I've made it no less than fifteen times in the last few months!
I decorated the pie with colored shredded coconut to mimic the sunset over the salt flats and mountains at Kalo Dungar, in Kutch Gujarat. I highly recommend using Thai Kitchen's full-fat coconut milk in a carton instead of canned coconut milk, as it has a fresher taste and does not contain any thickeners or preservatives.
Gujaratis love a good handheld snack. Muddy buddies, or puppy chow, is the kind of snack you can grab a fistful of and throw into your mouth while on the move! Traditionally muddy buddies use peanut butter, but I substitute it with pistachio butter and add a healthy dose of cardamom to really make it sing. They are insanely addictive with their salty, sweet combo, making them the perfect party snack!
The first stop on my coffee cart treat quest (second stop, Raspberry Mazurkas, page 108) is the elusive Pink Cookie. Uncle Seth’s Pink Cookies are palm- size cookies scented with cardamom and topped with a pink- tinted cream cheese and almond frosting. Here, I’ve made them into a pat- in- the pan cookie bar with a layer of perfectly pink cream cheese frosting scented with a bit of almond extract.
Hot puddings are a great thing to make and eat in the cold weather, there is something so comforting and warming about them. Whether you enjoy this with cold ice cream, add more depth with some double cream, or just enjoy it on its own, this chocolate pudding has a lovely puddle of sauce at the bottom. The addition of cinnamon and cardamom would make anyone go for seconds.
I don’t know if crostatas are any simpler to make than pies or tarts, but the relaxed, unfussed feel of the pastry makes them my preferred summertime dessert. I don’t peel the peaches for this; if you prefer to, I recommend you add a little extra cornstarch to the filling so it doesn’t wind up too juicy. I cool all crostatas on a wire rack to prevent the crusts from steaming and softening. Note: This recipe calls for only 3/4 cup of the crumble, but I make the whole batch and freeze the rest for later.
If we all ate fika, I think the world would be a much better place. Fika is a Scandinavian ritual, like afternoon tea. Traditionally, a range of buns are served that you share with your neighbours, people you work with or friends (imaginary or otherwise). It’s such a great custom and even the mighty Volvo plant in Sweden stops for fika every day. What follows here are the recipes for three different flavour buns, all made from the same dough, but with different fillings (butters) and glazes. We recommend the Milky Way glaze with the cinnamon bun, the coffee glaze with the cardamom and orange bun and the orange glaze with the Nutella bun, but it’s totally up to you. We’ve given quantities for the butter and glaze recipes, but to be honest, you can adjust them depending on whether you want a subtle hint of flavour or a big mouthful, so don’t feel tied down to the measurements.
Popsicles (known here as artikim) are a national obsession, delivering a refreshing blast chill when the temperatures spike from hot to hades. From the cheap, delicious, artificially flavored ices you can buy along the beach to Mexican-style paletas, which come in a million gourmet flavors, it’s easy to get a frozen/sweet fix on a stick. To show off the gorgeous fruit in season, I based these pops around thick, juicy slices of figs. I slide them into popsicle molds, then tip a tart, honey-sweetened yogurt mixture around them before freezing. If you can, try to arrange your pops so the figs remain visible (see instructions in recipe), but no matter how you build them, they’re delicious. The tahini magic shell really is two-ingredient heaven; dip once and you’ve got a semi-translucent sesame slick that hardens on contact with the pops; dip twice for a thicker layer. I make a generous amount of the magic shell because it makes dipping the pops easier; you can refrigerate any leftover shell, then gently rewarm it in the microwave. If you want to halve it, you’ll just have to tip and swirl the pops around to coat them.
I’ve made these so many times, so you won’t have to. On the surface this seems like a dead-simple recipe, but it took quite a bit of tinkering to nail. Tahini has a complex molecular structure made up of lots of tiny carbohydrate molecules that cling to liquid for dear life, seizing up the way chocolate does if you add liquid to it at the wrong time. But if you play your carbs right and add the tahini last, after all of the other ingredients, it stirs in smoothly and bakes up into these sexy little squares that get better as they sit around. To make these non-dairy, swap in a neutral-flavored olive oil or vegetable oil instead of the butter.
Banana bread was always a staple in my mom’s kitchen when I was growing up. Over the years, I have riffed on her recipe in dozens of ways: adding chocolate chips, nuts, or spices; swinging from quick bread to cake; icing or dusting it with confectioners’ sugar. Then, about a year ago, I decided to play with the idea of a banana upside-down cake, topped with banana slices and salted caramel, which both soaks into the cake and drips all around it when the pan is inverted. That little idea turned out to be a total keeper. Here it is.
