Served at a luncheon for the coronation of Queen Elizabeth II, coronation chicken, or “Poulet Reine Elizabeth” as it was written on the official menu, is a dish of cold chicken coated in a creamy curry sauce. This is my textural vegan take, with cauliflower and chickpeas regally stepping in for the chicken. While classic recipes typically feature cream and mayonnaise in the sauce, I’ve lightened things up with coconut yogurt, which adds sweetness and a tropical tang that pairs well with the curry flavor. Greek yogurt works nicely, too, delivering more sour notes. Dried fruit is a common addition to “coronation-style” dishes, with some recipes calling for dried apricots or raisins; I’ve opted for the former (though you can use either), along with optional mango chutney for liveliness and subtle spice. This salad tastes even better the next day, so feel free to prep ahead; I recommend using leftovers to make a sandwich.
Growing up in a Greek community on Long Island, I did not eat meatloaf as a kid because that was always thought to be very much an American dish. But as an adult, it’s one that I have really adopted as my own, and I love it as an easy, high-protein main dish for weeknights. I also think it’s a perfect vessel for Greek flavors like Kalamata olives, feta, and oregano, with tzatziki served on the side. As a nod to the classic, I give you the option of an American-style, ketchup-based glaze, which I am partial to, but it’s easy to leave out, based on your preferences.

Originally held on Blakeley Island, the Alabama State Fair (Greater Gulf State Fair) began as a fundraiser for the Junior Chamber of Commerce. The inaugural year featured a young Elvis Presley as the first performer, and brought in 60,000 people to the fair.
This gluten-free cake is simple to put together and so pretty. You can use virtually any fruit (think apricots in the summer or figs in the fall) to sit atop, but I love the sour rhubarb, as it marries so nicely with the sweet almond-flavored cake. I grow a small patch of rhubarb in the yard, but it's not the most successful crop because it prefers a cooler climate to Santa Barbara’s. Luckily, it’s available at our farmers market. It’s a perfect celebration of spring, and the positioning of the rhubarb on top looks like a woven basket when it’s put together.
Fonio is excellent for breakfast: It is easy to digest and slowly releases energy in your body throughout the day. The choice of fruits is up to you; feel free to substitute those in the recipe with your favorite seasonal fresh fruits. The brown butter is also optional, though it will definitely add a rich, nutty flavor to your breakfast.

Don’t shake the can of coconut milk before opening it—you’ll use the layer of cream on top in this sweet and spicy dressing, which is mellowed by the cooling iceberg lettuce and rich dark-meat chicken. Transfer the unused coconut milk to a clean jar and refrigerate it for making soup or a curry (it will hold for several days).
