When Major Jackson was fresh out of college, he found a Cajun restaurant in Philadelphia that had the best Chicken Big Mamou he’d ever had. When the restaurant closed he tried to recreate the recipe but it never came out quite right. That is, not until one of our producers did some digging and found the original recipe for him.
This dish is packed with bold flavors of garlic, spice, and vinegar and balanced out by the rich, creamy grits. The hint of rosemary pairs nicely with the piney hop aromas of Sierra Nevada Pale Ale. This dish is so bold it needs a smooth beer like Pale Ale to cleanse your palate between bites.
Let cream cheese soften and grate the Old English cheese. Beat together with an electric beater, adding garlic salt and Tabasco. Mix thoroughly. Add chopped pecans and beat. Lay out wax paper and sprinkle with chili powder and paprika. Shape cheese mixture into two rolls. Roll in paprika and chili powder mixture and store (in fridge) until ready to use. These rolls can also be frozen.
Excellent hot, at room temperature, or cold, these will keep 5 days in the refrigerator and reheat nicely.
