This is what I call a fridge-eater recipe. I made it one night with no time and no plan. I opened the fridge and grabbed everything that seemed at least vaguely to go together. I took some sausage from the freezer, some peppers on their last legs, some broccoli rabe, and a couple odds and ends of onions. Add to that the remnants of a few open cans of tomatoes and . . . voilà, classic sausage and peppers. The key here is getting a nice sear on the sausage and cooking the tomato down until it coats the sausage and vegetables well.
The longer this sits in the fridge, the more delicious it gets. Reheat it and then throw it on a hoagie or on a mound of mashed potatoes or with polenta.
I give you the perfect kofte. I was given the recipe by a friend who lives in Tunis and it’s a cracker. The minced lamb must be left well alone after the pine nuts and other flavourings are added to allow the spices to infuse and develop. Cook over a barbecue on skewers or under a kitchen grill. Serve with warmed pitta breads, Greek yoghurt and the dazzling pickled red onions perfected by my wife, Nykeeta. A tomato salad is a good accompaniment, too.

Pizza rolls are a very popular street food and this tear-and-share traybake makes a great and always welcome addition to an informal dinner buffet, a picnic or a kids’ birthday party.
Common fillings include the usual tomato sauce, mozzarella and often ham; however, this recipe uses one of my favourite combinations based on ripe red sweet peppers and onions. The vegetables are simmered before being blended to a cream: the cooking brings out their sweetness and makes them easier to digest. The creamed filling also makes a delicious dipping sauce, so don’t throw away any leftovers!

Make the labneh: Line a medium sieve with muslin or finely woven cheesecloth and place atop a container large enough to catch any drips. Transfer the yogurt to the muslin and place the whole thing in the refrigerator overnight. The liquid that separates is whey and can be saved for another use, such as baking sourdough, adding to salad dressings, or fermenting. Store the labneh refrigerated in a sealed container for up to 10 days.
All the dishes in this chapter are made with chicken thighs, because I unashamedly love them. They’re succulent—so much better than breasts, which can dry out, in fact it’s hard to overcook chicken thighs—they all cook at the same time (and quickly), and there’s no carving. If you like a mixture of thighs and drumsticks, the recipes will will work with those, too, just replace half the thighs in any dish with drumsticks.
