Since beef was expensive in Japan when I was growing up, it was a real treat when my grandmother, Hatsuko Ishikawa, invited us over for a meatloaf with amakara (salty and sweet) sauce, made with soy sauce, honey, and vinegar. She made hers in a round cast-iron skillet and always served it with potatoes, which were tossed in the pan (with the lid closed) to make them fluffy. This recipe is enhanced with a miso-infused shiitake mushroom sauce, my own wafu version of meatloaf.
Rillettes, so very French, are usually made with pork cooked in its own fat until it’s as spreadable as jam. These are lighter, made with both fresh and smoked salmon and miso butter. The butter gives the rillettes their luxurious texture (it also holds everything together), and the miso is the flavor that few people can identify on first bite. Serve the rillettes on toast or crackers with white or sparkling wine. Cocktail hour perfection.
With a split salmon head, or two, peeking up from a savory miso broth, sinigang with salmon and miso is perhaps one of the most popular variants of the Filipino sour soup.
Miso tends to burn when broiling, so be very careful that the fish is not close to the heat source. Also do not forget to oil the grill with a mild oil such as rapeseed. The miso dries out on the skin, giving the fish a slight crust and a moist center.
Soybeans are such an integral part of Asian cooking that tofu is often paired with edamame in the same preparation, showcasing the beans’ versatility. In this lovely Japanese soup, white silken tofu is surrounded by a green moat of pureed edamame. Traditionally, pods of fresh soybeans would be boiled, shelled, and hand mashed. You can liberate yourself by using frozen edamame and a blender.
This miso-based marinade produces spectacular results with fatty or oily fish such as salmon, sea bass, yellow tail, black cod, blue fish, and pompano. It cures the flesh slightly and permeates it with a delicate flavor. Grilling caramelizes and glazes the surface, leaving the flesh succulent. Plan to marinate the fish at least 12 hours before cooking. If you don't have sake, use a total of 1/2 cup mirin.
Eaten blindfolded, the mushrooms taste like chicken.
