The flavors of a tagine without the fuss. This dish is quite sweet, because of the prunes, so it does need the preserved lemon to cut through that. If you don’t like prunes (I know they divide people), use dried apricots or pitted dates instead.
Cauliflower-Coconut Crown Soup | garnished with smoky baby florets
The idea here is to cut a cauliflower into the tiniest florets possible. It’s not difficult, but it takes a little time. Of course, the cauliflower morsels are not really quite as small as couscous, but they are small enough to cook very quickly. A delicate, flavorful side dish.

This takes just 15 minutes to make and I cook it very often at home because it’s simple, light and healthy and it’s full of flavour. This is a Spanish version of a Chinese stir-fry.
It can be hard to resist a recipe that includes the phrase “lime-scented sour cream” so why even try. Cauliflower is simmered until tender, pureed until smooth, enriched with a scoop of that lime-scented sour cream and then served with crumbles of crisp chorizo and another dollop of that cream.

The burger craze doesn’t seem to have left a stone unturned. New York, London, Paris, Stockholm--every city I visit has any number of burger bars touting gourmet beef patties in soft brioche buns. Don’t get me wrong, I love a burger! But after seeing all that meat, I find myself craving something a little lighter and fresher tasting. Wrap your hand round this cauliflower cheeseburger, take a big bite, and let some of the juice dribble down your hand ... just like the real deal!
When I was growing up in Bombay, this was a very common lunch dish at our house.
This is one of my favorite suppers, although there’s nothing that says you can’t serve this as a vegetable side as part of a more conventional meal.
