This recipe hits the spot when you're craving a pizza, but don't have one in the freezer! An ideal five-minute snack or quick lunch that doesn’t involve much cooking!

INGREDIENTS:

  • 2 slices of bread 

  • Vegan butter or spread, for spreading

  • 1–2 tablespoons tomato purée (paste) 

  • Salt and freshly ground black pepper 

  • 1 teaspoon mixed herbs (dried oregano, basil, thyme, sage, etc.) 

  • 25–50 g (1–1¾ oz) vegan cheese, grated 

  • Extra pizza toppings you enjoy (chopped olives, chopped red onion, sliced sweet/bell peppers, sliced mushrooms, vegan meat alternative, etc.)

  • Olive oil, for drizzling 

PREPARATION 

1. On each slice of bread, spread a layer of vegan butter. Turn over each slice and spread over a thin layer of tomato purée. Season generously with salt and pepper, then add a large sprinkle of mixed herbs.

2. On one slice, add the grated vegan cheese and, if you like, some of your favourite toppings, such as chopped olives, red onion, peppers, mushrooms and vegan meat, etc. 

3. Drizzle with olive oil and close the sandwich together with the other slice of bread. 

4. If using a toastie machine, place the sandwich inside and toast until golden. If using a frying pan, drizzle a little olive oil into the pan and fry on each side over a medium to high heat for 3–5 minutes, or until golden and the cheese has melted.
