Stephen’s method, (which does not involve a toaster!) 

“Good bread, toasted on a griddle or in a cast iron skillet over low to medium heat with a smear of butter and olive oil until nicely crisped on both sides. Slow down.

Think of toast as a beginning not an end” 

Some thoughts on toppings

  • Chevre cheese and a handful of fresh herbs 

  • Ricotta with slices of fresh peach, a drizzle of honey and sea salt 

  • Open faced grilled cheese sandwich with excellent cheddar on a thick slice of bread 

  • Wilted spinach with garlic and hot chile and a shaving of Parmigiano-Reggiano  and drizzle of olive oil
