I'm now far enough away from the bloody book to actually crack it open again, because I'm hungry and craving those meatballs.
Lynne's meatballs. Her Sweet-Sour Chicken Meatballs with Candied Lemon Peel, to be exact.
I must warn you that you'd better strap on your hard hat, because I'm quite certain that these meatballs are unlike anything you've ever put together. Their origins are religious, dreamed up by Italian Catholics as a celebration dish. But don't let religion stand in your way; both believers and pagans can agree on this sumptuous take.
The concept is simple: meatballs made of ground chicken thigh, spinach, a little bit of chopped salami, bread crumbs, cinnamon, cheese, almonds and -- the piece de resistance -- candied lemon peel.
They are sauteed until lightly browned and then sauced with red wine glaze. They are out of this world. I'm serving mine this weekend on a bed of arugula with a big glass of Primitivo.
