Quick dinners as a kid were often baked beans on toast, smothered in cheddar and stuck under a hot grill until all melty. I could never be patient enough to wait either, and would burn my tongue on hot cheese lava and tomato sauce (worth it). It’s not uncommon to find some kind of white bean at a Middle Eastern breakfast table, stewed in a tomato-based sauce. This recipe is a happy amalgamation of the two. You can scoop it right out of the pan with warm pitas, or spoon it onto sourdough or baked potatoes and serve it for breakfast, lunch or even dinner.
This is our house granola, because it is both delicious and adaptable. Swap out the nuts, sub in seeds, mix in whatever dried fruit you want. I’ve even made it with maple syrup instead of date molasses. But this is the version we like best. The date molasses and tahini swathe each morsel in an addictive, salty-sweet coating that is hard to stop snacking on. We spoon this granola onto yogurt, use it to top fruit crumbles, layer it in parfaits, and eat it out of hand throughout the day.
If you like your granola on the chewy side, bake it for less time (35 to 45 minutes) and pack it more tightly in the baking sheet; for crispier granola, bake it longer (40 to 50 minutes) and spread it out in a thinner, more even layer. As always, much depends on your individual oven.
Arayes are Lebanese and out of the ordinary in every way. While they could be thought of as lamb burgers, their unique shape makes them much more than that. They can be cooked on an outdoor grill, or indoors in a sandwich pan or skillet. In either case, the heat should be moderate to allow the filling to heat through without burning the bread. Serve tabbouleh or a chopped tomato and cucumber salad on the side.
A broccoli salad makes sense. Broccoli loves you, and you love it, so everything is going to be fine. Well, once we make one. Gorgonzola rules, don’t be scared, and eggs rule, so don’t worry. Bacon vinaigrette is always nice and warm. We will get through this and make this right. This salad low- key could be made in any season, warm or cold. Also it’s a fire dinner or breakfast. Dang, just eat this every day, all day. You’ll become so strong.
Growing up, I awoke to the smell of this omelet cooking on most weekends, and my mom (whom our kids call “Nanima”) still makes it for the kids whenever they stay over. First, the potatoes are diced and sautéed until they’re perfectly tender, and then you add the spiced egg mixture. My mom would also pack it with onions, and we’d enjoy it with fresh paratha (a flatbread), yogurt, and green chutney; you can also serve it with Pickled Carrots. It’s kinda like a frittata but with all the Indian spices to warm your soul (and your taste buds). I love that the kids gobble it up and that they’re just as excited when they smell it cooking on a weekend morning as I was!

Flavored with freshly ground cardamom and a little rose water, this cake is made with both all-purpose flour and corn flour (which is milled more finely than cornmeal). It has an ideal ratio of cake, topping, and just a little crunch, which you get from the coarse yellow semolina flour, or sooji in Hindi, that’s dusted on the bottom of the pan before you add the batter. The result is both familiar and exciting—it’s like the best and most interesting corn muffin ever. It’s also the perfect complement to any kind of tea. Nawida usually tops one side of the cake with mild white poppy seeds and nigella seeds, which have just a touch of bitterness, and the other side with black raisins and large pieces of walnut. You can choose just one topping, but both together on one plate make this very easy dessert so much more appealing—and this approach allows everyone to try both. Ideally this should be baked in a rectangular metal pan about 9 by 13 inches (23 by 33 cm) so that you can easily cut the cake into diamond shapes. I use a square metal brownie pan, so the pieces come out a little thicker, but in a pinch you could also use two round cake pans or even muffin tins. Nawida sometimes uses muffin tins shaped like hearts and stars so that it’s easy and fun for her kids to take a piece of cake to school. Just pay attention as it bakes, as the bake time will vary slightly with a different shape of pan. As with the firni on page 299, though you can buy cardamom pre-ground, for this dish I strongly recommend you grind it yourself. It doesn’t take very long!
These are Brussels sprouts but with a difference. First, they are finely shredded and sautéed in plenty of butter flavoured with nutmeg and sage, then they are combined with orecchiette, double (heavy) cream and plenty of Parmesan.
The crumble steals the show in this salad! You can serve whatever leafy greens and vegetables you want with it, and it’s still going to be the best salad you have all week. I’ve headed in an autumnal direction here—chewy kale leaves with apple batons and cranberries. I also crumble over some soft goat cheese, which works beautifully with the sweet and sour elements of the salad. All together it’s a great combination of textures, colors, and flavors. It’s substantial enough as a standalone meal or as a statement side dish (official term!). The cranberry-plumping step (another official term) is optional. But once you’ve plumped, you’ll never go back!
