Spatchcock chicken—also known as butterflied chicken—is the easiest way to roast a whole bird, full stop. Removing the backbone and flatteningout the bird allows the breast meat and leg meat to reach their target temperatures—around 150°F for the breast and 165°F for the legs—at the same time, which is a challenge whenever roasting a whole chicken (unless you truss it, which is another lesson for another cookbook). Another trick for roast chicken excellence is rubbing the meat with an intensely flavored spice paste, and the North Afri- can-inspired one I use in this recipe is a delicious blend that will give the chicken’s skin a beautiful brown hue, and works equally well on pork, fish, and slow-roasted meats.

This hot and fiery soup is seen only in the Indo-Chinese restaurants of India. When the weather is cold or I’m feeling unwell, I often make this soup. To boost the protein, you can add bits of leftover rotisserie chicken or tofu. Serve this with rice wine vinegar, Chilli-Soy Vinegar Sauce, or Indo-Sichuan Sauce on the side.

A Bharta is a roasted vegetable mash traditionally made with eggplant (baingan bharta). We thought of using butternut squash in the fall and winter seasons because that vegetable is so popular and prevalent in the States. This makes a terrific Thanksgiving side dish— in fact, we introduced this dish on the Thanksgiving menu at Rasika. The tenderness of butternut squash can vary, so start checking your roasting time at the 20-minute mark. That may be enough time for the cubes to soften. Or it may take up to 30 minutes. The same holds true for the cooking time in Step 4, when you want the finished squash to be dry rather than loose. Some squash have more moisture in them than others, so this step could perhaps take an extra minute or two.

There is no way I could even attempt to match the virtuoso performance that Maya Angelou put on when she prepared her curry for me in her Sonoma kitchen over four decades ago. My own curry, from my book Sky Juice and Flying Fish: Traditional Caribbean Cooking, is more of a West Indian–type curry that includes potatoes along with the chicken.
