I used to whip feta with milk, but the site Serious Eats taught me about using Greek yogurt, which yields a super creamy, pillowy dip. Serve it with warm pita or grilled sourdough and some cucumbers sliced on an extreme bias. I’m not usually one to suggest more prep time, but homemade pita is immeasurably better and there are plenty of great recipes online.
I like the presentation of the salty bits on top, but you can pulse all the ingredients together for a more homogeneous texture.

My mom adapted this from her Italian mother-in-law’s whole steamed artichoke recipe (see page 232) to make a dish that easily feeds a crowd. It uses the same flavors but eliminates the prep work required for whole artichokes and capitalizes on that mid- twentieth-century game-changer—frozen food—in the form of a package of frozen artichoke hearts. As in many ethnic families who have added their personal flavor to the standard Thanksgiving meal fare, this is my family’s “Italian” staple side dish and the first leftover scavenged the next day.
Arayes are Lebanese and out of the ordinary in every way. While they could be thought of as lamb burgers, their unique shape makes them much more than that. They can be cooked on an outdoor grill, or indoors in a sandwich pan or skillet. In either case, the heat should be moderate to allow the filling to heat through without burning the bread. Serve tabbouleh or a chopped tomato and cucumber salad on the side.
When he’s in charge of pizza night, Saba follows a ritual: He starts the day before, making the dough from scratch, using no other flour but Tipo 00 (which is known for creating dough with a light, chewy texture). He budgets at least 12 hours for the dough to rise, and when he (and the dough!) is ready, he rolls and assembles one pizza at a time, pulling from several bowls of neatly prepared toppings, like a real pizzaiolo. Finally, he heats up his Ooni pizza oven to bake the pies. It’s a whole thing, and he is very proud of it. Needless to say, pizza night my husband’s way is not something that happens frequently. And yes, it’s special for that reason alone.
But this recipe is not that! And you might not approve of calling it “pizza,” but let’s just go with it. This is pizza night my way—lazy but delicious. It takes less than 15 minutes to assemble and does not require time for the dough to rise, nor a special oven. Made in a sheet pan, from phyllo dough and without sauce, it’s definitely not traditional. Yet the phyllo makes a light and flaky base for a simple assortment of veggies and cheeses.
I give you the perfect kofte. I was given the recipe by a friend who lives in Tunis and it’s a cracker. The minced lamb must be left well alone after the pine nuts and other flavourings are added to allow the spices to infuse and develop. Cook over a barbecue on skewers or under a kitchen grill. Serve with warmed pitta breads, Greek yoghurt and the dazzling pickled red onions perfected by my wife, Nykeeta. A tomato salad is a good accompaniment, too.
When I first saw references to this all-in-one method of making pasta, I was sceptical. Surely it couldn’t be possible to cook the sauce and the pasta all at once in the same pan? It seemed to violate every rule in Italian cooking. But then I realized that the method is not really so far from a risotto. The bonus of this technique—aside from incredible speed and ease and minimal washing up—is that the pasta is seasoned by the sauce as it cooks and becomes deeply flavored with wine, aromatics, stock—whatever you choose to add. It works with any shape of pasta—but a good quality brand makes a big difference here—and almost any combination of vegetables and other flavorings such as anchovies or cured meats. You just have to be careful to measure the ratio of pasta to water accurately, use a wide shallow frying pan or sauté pan (it won’t work in a tall narrow saucepan) and be generous with your seasoning.

Fishcake recipes are always handy, featuring ingredients from the pantry. In Malta, similar patties are also made with corned beef. I like to serve these with plenty of lemon and a salad of iceberg lettuce. They are also nice eaten cold and can be added to a platt Malti.
