My mom adapted this from her Italian mother-in-law’s whole steamed artichoke recipe (see page 232) to make a dish that easily feeds a crowd. It uses the same flavors but eliminates the prep work required for whole artichokes and capitalizes on that mid- twentieth-century game-changer—frozen food—in the form of a package of frozen artichoke hearts. As in many ethnic families who have added their personal flavor to the standard Thanksgiving meal fare, this is my family’s “Italian” staple side dish and the first leftover scavenged the next day.
These smashed potatoes are inspired by my favorite stir-fried mala potatoes I get from the Sichuan restaurant near my house. Their version is crinkle-cut, but the seasoning here is the same and the shape is just as playful. Mala refers to a blend of primarily Sichuan peppercorns and spicy chilis, and lends its name to that buzzing, almost tingly sensation you get from eating Sichuan food. This spice mix also includes cumin seeds and white pepper to round out the heat with a little earthiness, turning these smashed potatoes into tingly taters.
Blue cornmeal gives this cornbread its haunting corn flavor and lavender hue, but yellow or white cornmeal will work equally well. You can find blue corn meal in co-ops and online. Store it in the refrigerator or freeze.
If you haven’t yet had delicata squash, it’s time! You can actually eat the thin, tender, nutrient-packed skin, which means it’s perfect as the base for a quick side dish that even my kids adore. The squash gets a coating of crunchy panko and flavorful Parmesan cheese, bakes until golden, then gets a drizzle of hot honey. I love this paired with Hot Honey Glazed Salmon That Goes with Everything or as a beautiful holiday appetizer or side. My husband and kids love to dip the squash in ranch dressing—figures!
When asked my favorite way to serve slicer tomatoes, I always reply, “with brown butter, black pepper, and salt.” There is something about the nuttiness of brown butter that takes peak-season tomatoes to a whole new level. Our favorite tomatoes to serve this way are classified as brown tomatoes, which tend to have a meatier, more robust, umami-forward taste than green, red, or orange types. A seed called Paul Robeson has been a favorite to plant since our first year, and when combined with a decadent drizzle of brown butter, it takes on a mystical, toasty flavor. To dress this dish up, apply nothing more than a few briny capers, delicate slivers of shaved sweet onion, a scattering of earthy chanterelle mushrooms, or petite leaves of fresh basil.
Tamarind chutney is one of the best uses of tamarind on the planet! A favorite condiment for Indian snacks and street food, this chutney showcases the fruit’s date-like depth and tangy acidity, and balances them with brown sugar sweetness and the woody flavors of ginger and cumin. For all that complex flavor, it’s actually very easy to make and it keeps a long time. It’s a fantastic accompaniment to crispy fried food, but it’s also terrific drizzled over roasted vegetables.
A sweet-and-sour symmetry is inherent in my style of cooking. If it isn’t expressed through actual components of a dish, it’s delivered via side bowls or ramekins. Okra chow-chow has become one of my favorite media for attaining culinary harmony. And considering that okra is integral to Southern cuisine and agriculture, it’s also one of the clearest examples of two food cultures existing side by side and the ways they intersect. Serve okra chow-chow alongside scrapple (as I so often do), and you could consider this dish the poster child of Amish soul food.
