Being a Top Chef contestant can be grueling and exhausting and crazy fun. When we're all wiped out from nonstop competition, we do what we do best: eat good food. Some of my most memorable meals with those talented chefs involved banh mi, traditional Vietnamese sandwiches that layer cured meats, sausages, and pickled vegetables in small, soft versions of French baguettes. I love anything with pickles and fresh cilantro! I've put those flavors in a burger patty here and sandwiched them in my favorite French roll: buttery brioche. The rich bread makes all the difference, as does high-quality pork.
What's more perfect than the simplicity of this sandwich? It's comforting, not too difficult to make, and you need only a few key ingredients. The very best part of Thanksgiving is the day-after leftover turkey sandwich. We like ours on good white bread slathered with mayonnaise, a spoonful of turkey drippings or gravy, and cranberry gelée; a leaf or two of crisp lettuce; and a pile of thinly sliced breast meat seasoned with lots of salt and pepper. A cold glass of milk is our beverage of choice, although there may be a splash of last night’s Champagne left on the refrigerator door (with a small silver spoon hanging in the neck of the bottle to preserve precious bubbles).
