I call this "Challah French Toast à la Peter Pan" after the restaurant where I first had it as a child.
Grate 2 sweet potatoes (I don't bother peeling).
I make this soup, or something quite like it, all year, with frozen corn and fresh.
I sometimes serve these snacks with drinks, cutting the mushrooms into wedges and inserting a cocktail stick into each one.
The cinnamon adds that familiar, autumnal scent.
