  • Trucha al Vapor con Salsa Negra (Trout with Black Bean Sauce)

    A favorite from Alexis Alvarez Armas, this dish is inspired by Cuba's Chinese- Criollo cuisine. After cooking delicate trout fillets in a bamboo steamer, Alexis dresses them with a Chino- Latino blend of soy sauce, fermented black beans, olive oil, and lots of scallions and chives. It's a dish we could eat every day.

  • Smoked Trout Pâté

    The French seem able to turn just about anything into a delectable spread, and this is the easiest one I know. Smoked salmon could be used instead of the trout, as could minced cooked shrimp or other shellfish. Serve this spread with toasts or crackers, or add a small spoonful to Belgian endive leaves as a special appetizer.
