This dense cake was on the Christmas Day 2000 menu for Ann Bancroft and Liv Arnesen, friends and former teachers attempting to become the first women to ski across Antarctica. They consume approximately 5,000 calories a day to meet their bodies demand for fuel during their grueling trek of approximately 100 days in temperatures averaging minus 30 degrees Fahrenheit with winds gusting up to 100 miles per hour. Ingredients

  • 2 boxes (4 ounces or 113 grams) cherries

  • 2 1/2 deciliters (1 cup) raisins

  • 2 1/2 deciliters (1 cup) American whiskey

  • 115 grams (4 ounces) butter

  • 3 deciliters (1 1/4 cups) castor (white) sugar

  • 1 deciliter (1/2 cup) brown sugar

  • 3 eggs

  • 200 grams (7 ounces) walnut cores (shelled walnuts)

  • 6 deciliters (2 1/2 cups) wheat flour

  • 1 teaspoon baking powder

Instructions

  • Mix castor sugar, brown sugar, butter, eggs, and whisky together in a bowl and set aside.

  • Combine baking powder with sifted wheat flour. Add the baking powder and flour to the sugar mixture and blend until smooth. Fold in the remaining ingredients with a spatula.

  • Pour into a greased and floured bread pan. Bake at 350 degrees for 35-40 minutes (watch after 35 minutes). Cool on a rack and enjoy!
