For 2 to 4 pounds meat, poultry, firm tofu, tempeh, and full-flavored seafood. Yes, olive oil in an Asian inspired dressing. It lends far more than tasteless vegetable oils.

  • 8 large cloves garlic

  • 1/3 cup soy sauce

  • 1/3 cup tight-packed brown sugar

  • 1/3 cup rice vinegar

  • 1/2 cup red wine, or Chinese rice wine

  • 1/2 cup extra-virgin olive oil

  • 2 to 3 teaspoons chile-garlic paste, or 1 to 2 fresh hot chilies, seeded (optional)

1. Combine everything in a food processor.

Thai Coconut Milk Variation: Eliminate the wine. Substitute coconut milk for the olive oil, lime juice for the rice vinegar, and 2 to 3 tablespoons fish sauce for the soy. Add 2 tablespoons minced fresh ginger, and 1/4 tight-packed cup fresh coriander sprigs.

Lemon Grass Variation: Substitute 1/3 cup lemon grass for the olive oil, and 2 to 3 tablespoons fish sauce for the soy. Eliminate the wine.
