Stuffed Pig Stomach

Jane adores all things Pennsylvania Dutch and occasionally drags Michael "kicking and screaming" off to Akron so she can wander, browse and, we imagine, shop. While there, they indulge in authentic and unadulterated Pennsylvania Dutch food at the Akron Restaurant, a huge, touristy place that’s not a bit folksy.
On their last visit, the daily special was Stuffed Pig Stomach and it was flying out of the kitchen! A crispy membrane is stuffed with pork, potato, and herbs and served with authentic "7 Sweets and 7 Sours" sides: rhubarb sauce, baked cream pudding, pepper cabbage, buttered beets, lettuce salad with warm bacon dressing, and wonderful shoofly pie.
