This is a substantial, creamy peanut stew with plenty of spice from a good dollop of curry paste. Use your favorite brand of curry, a homemade paste, or even the ubiquitous Thai Kitchen brand. Canned crushed tomatoes are easy to find (and good here!), but this soup gains extra depth of flavor with canned fire-roasted tomatoes. I thought about making the miso optional, because, really, it is. But it’s a nice addition, lending extra body, flavor, and dimension.

This mullah, or stew, is a classic Sudanese dish. In Arabic, robe is the word for yogurt. During the Ottoman Empire, Syrian traders and Arab settlers heavily influenced the regional cuisine with the introduction of garlic and red pepper, among other seasonings. Dried okra is often used as a thickener in mullah, but many Sudanese, like Rasha [Ed. Note: Rasha is pictured above making this dish at a refugee camp in Calais, France], also favor peanut butter. Back in her home country, she would have prepared this stew with dried lamb jerky; as a substitute, she used minced lamb while cooking in The Jungle.

We were asked to make these as wedding favors for a friend, and we kind of rolled our eyes. Buckeyes? Really? But they're so ... boring. Peanut butter filling, rolled into balls and dipped in chocolate to resemble horse chestnuts. Sure, they're a favorite of Ohio natives, where the buckeye is the official state tree; and sure, they're easy enough to make. But where's the challenge? The excitement? Didn't they want something fancier for a wedding?
Remember to take the sauce out of the fridge about 30 minutes before serving to let it come to room temperature — you know how stubborn peanut butter can be.
These addictive truffles were inspired by some served at the prestigious Magnolia Grill in Durham, North Carolina, a restaurant known nationwide for its innovative desserts. Whereas the chef there uses dry-roasted peanuts, I much prefer the large, toothsome, regular goobers I order routinely from Aunt Ruby's in Enfield, North Carolina (1-800-843-0105), and for even smoother and richer texture, I do add butter to the chocolate. If ever the affinity between bacon and peanut butter and/or chocolate were questioned, these truffles serve as undeniable proof. Stored in an airtight container, the truffles keep in the refrigerator up to about a week and are best served slightly chilled.
