Chocolate Beet Cake Frosting

Q: I'm looking for a frosting recipe for a chocolate beet cake.

Lynne: A cream-cheese frosting like that used for carrot cake might be interesting. Use really good cream cheese - not the low-fat kind, please - and combine it with powdered sugar, vanilla, and a little bit of lemon juice, then beat with an electric mixer until fluffy.
