The monastery of Notre Dame des Prairies, located just outside of Holland, Manitoba, is home to a small group of Trappist monks. They are the keepers of a traditional recipe for Fromage de La Trappe, a gourmet cheese sold in a handful of shops.

These days, it is made by just one man, 80-year-old Brother Alberic, who says the future of the cheese is uncertain. [Read more here.]
