Call them what you will - calf fries, rooster fries, lamb fries, swinging beef, or Rocky Mountain oysters. What it comes down to is testicles, one of Michael Stern's favorite foods and, as he says, 'a food we need euphemisms for.' Although traditionally eaten as an appetizer, they can be had as the main event at the Testicle Festival in Montana and at eateries such as the Wolf Lodge Inn outside of Coeur d'Alene, Idaho and Cattlemen's Restaurant in the old stockyards in Oklahoma City.
